A highly aromatic spice blend, essential to much North African cooking.
Blend together:
15 ml ground ginger
15 ml whole coriander
10 ml ground chili powder
10 ml ground paprika
10 ml whole cumin
10 ml ground cinnamon
10 ml whole allspice
10 ml black peppercorns
10 ml ground turmeric
7 ml ground mace
7 ml grated nutmeg
7 ml whole cardamom
3 ml whole fennel seed
3 ml whole anise seed
2 ml whole fenugreek
2 ml whole cloves
2 ml cayenne pepper
2 dried bay leaves
5 ml dried lavender buds
15 ml dried rose petals
Grind in a spice grinder or mortar and pestle to a fine, uniform powder, and store in a tightly-sealed container until needed.
