Egg Salad Sandwiches

Peel and crush into a small bowl:
4 hard boiled eggs

Mix in:
60 ml mayonnaise
15 ml finely chopped sweet pickles (relish)
15 ml mustard

Mixture should be smooth and creamy, but not runny.  Adjust amount of ingredients to taste.  Spread thickly on a slice of bread. 

VARIATIONS: add chopped olives, pepperoncinis, paprika, dill weed, or whatever other flavors you think might work. Jenn sometimes leaves out the mayo for a lighter version.
