Breakfast Gravy

Most often found over Southern Biscuits for Biscuits and Gravy, this rich gravy can also be served over something like a Schnitzel, for an even heartier breakfast.

Mix together thoroughly:
0.5 kg ground pork, ground turkey, or even soy crumbles
15 ml sage
10 ml thyme
5 ml fennel seed, crushed
5 ml salt
5 ml black pepper
3 ml crushed red pepper flakes
1 ml ground nutmeg

Put into a large skillet over medium heat, and add 15 ml of olive oil if needed. Brown the meat or soy, stirring occasionally.

Whisk together in a bowl:
750 ml milk
125 ml flour

When the meat or soy is browned, add the milk mixture and whisk to ensure that there are no lumps. Cook until thickened, stirring constantly. Add salt and pepper to taste.
