Grandma Ellen’s banana bread is a welcome gift when she visits — we almost always have a loaf or three in the freezer!
Preheat oven to 175. Grease and flour two loaf pans. Put in your mixer bowl:
575 ml flour
225 ml sugar
180 ml milk
17 ml baking powder
5 ml salt
45 ml vegetable oil
1 egg
2-3 medium bananas (overripe is best)
Turn mixer on to medium speed and blend for about 30 seconds, then scrape the sides and bottom of the bowl and continue mixing just until well-blended. Divide the batter between the loaf pans and bake for 55-65 minutes, until a toothpick inserted into the center comes out clean.
