Green Papaya Salad

Several of the necessary ingredients for this salad may be very hard to obtain outside of Asia and the USA.  Green (unripe) papaya and the shrimp chips, in particular, may be hard to come by.

Prepare as noted:
1 green papaya (peeled, seeded and grated)
1 carrot (peeled and grated)
10 Shrimp (peeled, boiled and sliced in half vertically)
250 g pork shoulder (boiled and slice thin against the grain)
1 bunch cilantro (cleaned, picked from the stem)
60 ml peanuts, roasted and chopped

Blend the sauce:
60 ml fish sauce
225 ml water
60 ml sugar

Fry according to package directions:
Shrimp chips

Combine papaya and carrot.  Put Shrimp and pork shoulder slices on next.  Top with Cilantro and peanuts.  Mix sauce and sprinkle over top of salad.  Serve with shrimp chips – scoop salad with chips and eat.
