No family gathering from childhood was complete without Grandma’s potato salad. This is one of my dad’s favorite foods, but it has to be Grandma’s recipe, otherwise it just isn’t right. As a spoiled rotten only child, Mom would make a side dish without the onions and relish just for me, but that meant that I only ever got one little dish of potato salad.
Boil until softened, then slip the skins off and chop:
750 g potatoes
Hard-boil, peel & slice:
4 eggs
Blend together in a large bowl:
125 ml mayonnaise
45 ml olive oil
45 ml vinegar
45 ml milk
15 ml sugar
2 ml salt
1 ml pepper
Add potatoes and:
30 ml sweet pickle relish or finely-chopped sweet pickles
1/2 yellow onion, finely chopped
3 ribs celery, finely chopped
200 g sliced black olives
Blend together and top with sliced eggs. Chill and serve.
