There are certainly a plethora of ways to make a burrito. This recipe is inspired by those made by a street vendor outside Lars’ office at a prior job. Muy delicioso!
Make or buy:
6 extra-large flour tortillas – about 25 cm in diameter.
Grill and shred:
¼ kg of chicken meat.
Prepare according to package directions:
450 ml rice (brown rice is even better, if you can find it!)
Put into a small saucepan:
250 ml canned black beans
Add to beans:
5 ml cumin
5 ml chili pepper
Mix and heat through.
Have on hand :
yogurt and/or sour cream
pico de gallo
sweet chili sauce
salsa verde
shredded cheese (jack/cheddar blend is ideal here)
1 chopped tomato
2 chopped green onions
chopped avocado (optional!)
Warm the tortillas, if necessary, in the microwave or on a hot, dry griddle, so that they are supple. Arrange down the center of the tortilla, leaving some room at one end a scoop of rice, a sprinkling of chicken and a couple of spoonfuls of beans. Add the condiments along the side, as desired.
Fold up the bottom of the tortilla (where you left some space), and then fold the sides over the contents, forming an open-ended tube, which you can then enjoy. Have napkins on hand – this is almost inevitably messy!
