When Lars was out of town for work during Malina’s year, she kindly shared her mom’s salad recipe with Jenn for lunches during that week.
1 English cucumber, peeled, quartered, and sliced
1 tomato
300 g can kidney beans, drained and rinsed
2 carrots, peeled and shredded
225 ml feta cheese
550 ml corn
775 ml shrimp
60 ml balsamic vinegar
Combine all ingredients in large bowl.
