Cranberry Salsa

This is associated with Thanksgiving, and is served with tortilla chips. So, not Mexican at all.

Combine in a large bowl:
1/2 medium red onion, finely diced
125 ml fresh cilantro, chopped
60 ml honey
1 small jalepeƱo pepper, finely diced (remove seeds if you want less heat)
125 ml red bell pepper, finely diced
400 gram can whole cranberry sauce (see below for substitute)

Refrigerate until ready to serve, and then add:
350 g fresh cranberries

If you cannot find canned cranberry sauce, you can make your own, which is almost as good on the Thanksgiving turkey as is sylt lingon. Combine in a saucepan:
225 ml sugar
225 ml water

Bring to a boil and add:
350 g fresh cranberries

Return to boil, and then reduce heat, boiling gently for ten minutes, stirring occasionally. Refrigerate until ready to use.
